Pulped Natural Process
- Depulping: Ripe coffee cherries are mechanically depulped to remove the outer skin and some of the pulp, exposing the beans
- Mucilage Retention: Instead of fully washing the beans to remove all the mucilage, some or all of the mucilage is intentionally left on the beans.
- Drying: The beans, coated with mucilage, are spread out too dry. The drying process can occur on raised beds, patios, or other surfaces. The mucilage creates a sticky layer during drying.
- Turning and Raking: Regular turning or raking of the beans is necessary during drying to ensure even drying and prevent issues like fermentation or mold.
- Final Processing: Once the beans reach the desired moisture content, they are hulled to remove the remaining parchment layer and any residual mucilage.
